Cashew "Cream" Sauce

INGREDIENTS:

 

2 small yellow potatoes (or one large) , peeled, chopped

2 large carrot, peeled, chopped

1 small-medium onion, large wedges

1 garlic clove

3/4 cup cashews

2 tsp sea salt plus extra to taste and pepper

INSTRUCTIONS

-Boil water in a medium pot. Add carrots and potatoes and cook for 7-10 minutes. Add Onion. Cook until everything is soft.

- Once everything is done, add vegetables to a blender/ Nutribullet along with garlic, and the water from the pot (about a cup or a little more)

- Add salt and cashews and continue to blend until smooth

-Pour over prepared pasta or use as a creamy dipping sauce
