Healthy Pancakes 3 Ways

 

Banana Oatmeal Pancakes:

 

Ingredients:

  • 1 medium ripe banana

  • 2 large eggs

  • ⅓ cup oat flour (Or grind Old Fashioned Oats in a blender or food processor)

  • ¼ tsp cinnamon

  • Choice of oil or butter for cooking

  • Optional: ½ Tsp. vanilla

 

Instructions:

  1. Mash banana in a medium sized bowl with a fork

  2. Add the eggs to the banana and mix until well combined

  3. Stir in the oats and cinnamon to the banana mix 

  4. Stir in Vanilla if Desired

  5. Heat a skillet over a medium heat with a dash of choice of oil or butter

  6. Ladle ¼ cup of the mixture into the skillet, cook on one side until a few small bubbles appear in the batter, then turn and cook on the other side for about 1 minute (or until golden brown on both sides)

  7. Serve with Berry Jam, Peanut butter and honey, or Maple Syrup

Sweet Potato Cinnamon Pancakes:

 

Ingredients:

  • 1/2 cup mashed sweet potato 

  • 2 eggs

  • choice of oil or butter for cooking

  • 3/4 teaspoon ground cinnamon

  • pinch of salt

 

Instructions:

1.      Roast sweet potato for about an hour at 400 degrees F. Or, peel and dice the sweet potato and place in a microwave-safe bowl and cover with about 2 inches of water. Cook in the microwave until soft, about 5-6 minutes. Let cool slightly. Drain and mash lightly with the back of a spoon

2.     Spoon out 1/2 cup of the mashed sweet potato

  1. Mix together in a blender the sweet potatoes, eggs, cinnamon, and salt

4.     Heat oil or butter over medium-low heat (I prefer Coconut oil)

5.     Ladle a few tablespoons of the sweet potato mixture and cook until bubbles appear or until golden brown, flip and cook for a few minutes until this side is also golden brown (Lower heat works better)

6.     Topping ideas: butter, peanut butter and honey, Berry Jam, or maple syrup.

Whole Wheat Crepes:

Ingredients:

  • 2 large egg whites

  • 1 large egg

  • 2–1/4 cups milk, room temperature (the temperature is key)

  • 1 Tbsp. sugar

  • 1/3 tsp. salt

  • 1/2 tsp. baking soda

  • 1-1/2 Tsp. oil (Vegetable or coconut oil)

  • 2 Tbsp. butter, melted

  • 1-1/3 cup whole wheat flour

  • 1 tsp. vanilla extract (optional)

 

 

Instructions:

  1. In a large mixing bowl, whisk eggs then add milk

  2. To the same bowl, mix in sugar, salt, baking soda, oil, and butter (add Vanilla here if desired)

  3. Gradually add flour in until no lumps are visible

  4. Heat a medium non-stick pan over medium heat. Spray with non-stick cooking oil. Ladle 1/4 cup of batter into the center of the pan and swirl to spread evenly.

  5. Cook for 30 seconds or until edges are visibly golden and flip. Cook for another 20-30 seconds and remove to a serving platter.

  6. Continue until all batter is gone. 

  7. Fill with one of the following mixtures:

          -Greek yogurt, berries, and a tsp or 2 of sugar

         -Nut butter, honey and Bananas

        - Peanut Butter and Berry Jam

 

Roll or Fold  and Enjoy!
