Protein Breakfast Muffins

INGREDIENTS:

1 large ripe banana

3/4 cup of egg whites

1/2 cup oat flour

1/2 cup plain Greek yogurt

2 scoops of vanilla protein powder (I used two tablespoons flaxseed protein)

 1/4 cup oats

1 tsp baking soda

1 tsp baking powder

1/2 tsp cinnamon

Dash of salt

INSTRUCTIONS:

Preheat Oven to 180C / 350F

 

Combine all the wet ingredients. Start by Mashing the banana with a fork and then add the egg whites, and greek yogurt. In a separate bowl mix all the dry ingredients together (flour, oats, protein, baking soda, powder, cinnamon, salt) 

 

Pour the dry ingredients into the wet half at a time. Mix and pour into VERY WELL GREASED muffins tins (I believe Rubber Muffin Tins work best) 

 

Bake for ten minutes. If still under baked leave in for two more minutes
